We present an easy interpretation of a beverage found on our latest cocktail list. Designed as a batch pre-mixed that's bursting with the flavours associated with holiday season, making it ideal for hosting a festive gathering. Save the extra syrup for morning drinks, desserts, or for another batch of the drink.

Yields 10 servings
Ingredients for the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Put all the components into a pan, bring to a gentle boil, mixing so the sugar melts. Then, turn off the burner and leave to cool down entirely. Decant into an clean bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.
Preparing the Premix: Combine the specified liquids in a sizeable container, allow it to infuse for an hour, then pass it through , ideally through muslin, making it perfectly clear.
To serve: Add 85ml of your cocktail base into a stirring glass packed with ice, and stir gently for one minute to cool it down. Pour into an cold coupe glass or a similar vessel, garnish with the cranberries and finish with a brief mist with the mandarin essence above the glass.
